In a mid of winter I crave summer food.I found some weird looking aubergines and decided to try them.
There’s a traditional bulgarian appetizer that I love with aubergines. It’s called “Kjopoolu”. Here it goes: You put the aubergines and 2-3 red peppers in a oven and bake until the skin ir ready to be peeled. Remove from oven, let them cool and peel. Chop them , add 2-3 chopped tomatoes , 1-2 cloves garlic, persil, salt and oil. Mix everything together. Serve with bread and feta cheese.
