No, this is not gonna turn into a stay-at-home mom and culinary blog. But I made these for the first time today after modifying a recipe I had and they turned out great and easy to make. And I also love how the photo came out . In no time you have a great and healthy take along snack or breakfast for you and the kids. Submitted it for stock, hope they like it over there too.
Muffins with feta , spinach , oatmeal and cherry tomatoes
250gr plain youghurt
100gr flour and 50gr oatmeal
1/2 package backing powder
100gr feta cheese shredded
75 gr leaf spinach
several cherry tomatoes cut in squares
3 table spoons of oil / could be replaced with peanut butter
Beat eggs and yogurt add flour, oatmeal, baking powder, oil, feta cheese and spinach and tomatoes in that order. Put in muffin forms, sprinkle with oatmeal and bake at 180 C about 20 min until ready. Take out of the oven and allow to cool .
Salty muffins? Yeah sure!
P.S . In the original recipe there was 100 gr of cheese and 75gr ham , which also works well. Just add your favorite 2-3 ingredients and bake.
